■広大なジェマドロ農園でのコーヒーづくり
エチオピアは、毎日の生活の中でコーヒーセレモニーが行われるほど、コーヒーの文化が深く根付いている国。30万以上あるという小さな家族経営のコーヒー農園が多いこの国で、ジェマドロ農園のような広大な土地を持つ農園はとても珍しいといいます。
きれいな水の給水や、ほとんど人の手を加えずに自然を育てる環境保護に基づいた農業方法。それらに一心に取り組むことによって、ジェマドロ川岸に広がる2,300ヘクタールのこの農園では、最新技術の農業法によるコーヒー栽培が続けられています。
ジェマドロ農園では、コーヒーの木は50フィートもあるシダの日陰で守られ、高地で育てられます。その栽培地の広さは1,100ヘクタール。それ以外の農園の土地は、地域の生態系を守る森として保護されているものです。また、農園で働く人々とその家族たちも、きれいな水や医療機関、住宅、学校などを利用できる権利を持ち、社会的で住み良い環境を高い水準で受けられるよう約束されています。

About this coffee:
Ethiopia is a land where coffee is honored in daily ceremonies, a country where the coffee roots run deep. At the Gemadro Estate, as in most parts of Ethiopia, an ornate and beautiful coffee ceremony takes place three times a day – in the morning, at noon and in the evening. This unique ritual, an integral part of Ethiopian social and cultural life, pays homage to the vital role coffee plays in the history of the nation and the life of each Ethiopian. An invitation to attend a coffee ceremony represents the utmost gesture of Ethiopian hospitality.
To begin, the necessary ceremonial equipment is arranged on a bed of scented grasses. Coffee beans are hand-roasted in a flat pan over a small charcoal stove, their delightful aroma mingling with the scent of incense. The fully roasted beans are ground up with a mortar and pestle then slowly stirred into a clay coffee pot (jebena). The server then pours a tantalizing stream of coffee from a height of about one foot into several small, waiting cups and serves the fresh brew to all present, beginning with the eldest.
The traditional Ethiopian coffee ceremony is comprised of three rounds; a transformation of the spirit is believed to take place through the completion of Abol (first round), Tona (second round) and Baraka(third round).
In this nation of more than more than 300,000 small, family-run coffee farms, the expansive Gemadro Estate stands as an exception.
